Hiker’s Primavera Pasta

Ingredients

6 oz box white cheddar mac n’ cheese
1⁄4 c freeze dried green peas
1⁄4 c freeze dried sweet corn
2 T diced dried carrots
2 T diced sun-dried tomatoes
1⁄4 c shelf stable parmesan cheese
1 T dry milk
1 t italian herb seasoning
1⁄4 t granulated garlic
1⁄4 t freshly ground black pepper
1 T olive oil (1 packet)
4 c water

Notes

For the mac n’ cheese we used Annie’s natural brand. http://www.annies.com/naturalmacandcheese#jump15 Any similar type will work – use the one you prefer.

Shelf stable Parmesan cheese? Look for the “green” cans.

Want it fresh for an overnighter in spring?
You can also make this dish with fresh vegetables! Pick up whatever items you like, a couple handfuls. Pea pods, baby zucchini, baby corn, etc work well. In camp using a clean knife chop up the items. Add to the boiling water with the pasta and continue as noted above. Finish the meal with a roma tomato chopped on top.

Instructions

At home:
In a sandwich bag pack the dry pasta and vegetables together. In a snack size bag pack the cheese sauce mix, cheese, dry milk and seasonings. Tuck the oil into a spill resistant container or use a convenient single serving packet.

Bring 4 cups water to a boil in your pot, add in the pasta bag and cook for time on package (usually 8 minutes). Reserve 1/4 cup of the cooking water and drain the rest off carefully. Stir the seasoning bag into the pasta with the reserved water and oil till creamy.

I was sitting out back yesterday morning sipping coffee, watching the young chipmunks chase one another at breakneck speeds across the deck. One clever daredevil, hoping to get the advantage, jumped up on the fence rail and continued the chase from above, leaping at the last moment upon his littermate like a Hollywood stuntman. This morning one of them adopted a new strategy. The little rascal found an ambush spot, clinging from the side of the house, where he waited for his playmate to wander by unawares; he then pounced, and the two somersaulted off the deck and into the grass, squealing. Only to dash off and do it again. And again.

Now—what does this tell us about the personality of Jesus, who created these little dynamos with striped masks and boundless enthusiasm? What do they say about his heart? Polar-bear cubs will hurl themselves down snowy hillsides headfirst and upside down, just for fun. Spinner dolphins love to romp in the bow-wake of a boat, cavorting, leaping into the air and, well, spinning. Otters play tag. Our horses play tug-of-war with a stick—which is really quite funny when you think of how nobly a horse normally likes to carry himself.

Who gave your puppy his impishness, as he snatches your slipper and races round the house with you in tow? God is more playful than we are.

Chicken Ranch Tater Casserole

Ingredients

3⁄4 c instant mashed potatoes
1⁄4 c dried hash browns
2 T dry milk
1 T dry ranch dip mix
1 T diced dried shallots or onion
1 T shelf stable parmesan cheese
1⁄4 t dried garlic
1 oz cheddar cheese
1 cn 3 ounces chicken
1 1⁄4 c water

Instructions

At home pack the dry ingredients in a quart freezer or sandwich bag. Put the chicken and cheese with the bag.

FBC method:
Dice the cheese. Add 1 1/4 cups near boiling water, the can of chicken with broth and 3/4 of the cheese to the bag. Stir well, seal tightly, pushing out the air and put in a cozy for 10 minutes. Stir again and top with the remaining cheese.

Mug method:
Dice the cheese. Add 1 1/4 cups boiling water, the chicken with broth, 3/4 of the cheese and the dry ingredients to a large insulated mug. Stir well, cover tightly and let sit for 10 minutes. Stir again and top with the remaining cheese.

One pot method:
Dice the cheese. Bring 1 1/4 cups water and the chicken with broth to a boil in your pot. Take off the heat, add in the dry ingredients and 3/4 of the cheese, stirring well. Let sit for 10 minutes tightly covered (in cooler temperatures use a pot cozy), then stir again and top with the remaining cheese.

Notes

Instant dried hash browns can be found in many grocery stores, often near the instant mashed potatoes or you can dehydrate bags of frozen hash browns (look for ones with no oil added).
We used a natural version of the ranch dressing mix: http://www.frontiercoop.com/products.php?ct=dfmds&cn=Ranch+Dip
If you like more chicken use 5 ounce can or 7 ounce pouch if desired.
The cheese sticks can be found in most grocery stores and you can swap out flavors, look for pepper jack for more spice!

The Greatest Dignity of All

He enables us to love. He gives us the greatest treasure in all creation: a heart. For he intends that we should be his intimate allies, to borrow Dan Allender’s phrase, who join in the Sacred Circle of intimacy that is the core of the universe, to share in this great Romance.

Just as we have lost our wonder at the world around us, we have forgotten what a treasure the human heart is. All of the happiness we have ever known and all of the happiness we hope to find is unreachable without a heart. You could not live or love or laugh or cry had God not given you a heart.

And with that heart comes something that just staggers me.

God gives us the freedom to reject him.

He gives to each of us a will of our own.

Good grief, why? He knows what free-willed creatures can do. He has already suffered one massive betrayal in the rebellion of the angels. He knows how we will use our freedom, what misery and suffering, what hell will be unleashed on earth because of our choices. Why? Is he out of his mind?

The answer is as simple and staggering as this: if you want a world where love is real, you must allow each person the freedom to choose.

Thai Tomato Soup

Thai Tomato Soup

Ingredients

1 pkt single serving tomato soup
2 T diced dried onion
1⁄4 t dry ginger
1 t dried garlic
1 t sugar
1⁄2 t red pepper powder
1⁄2 t chili powder
1 T coconut cream powder
1⁄4 c diced sundried tomatoes
1 1⁄4 c water

Notes

Some brands of coconut cream powder are not Lactose free, look for it in natural food stores.

Instructions

In a pint freezer bag pack all the contents.

FBC method:
Add 1 1/4 cups near boiling water. Stir well, seal tightly and put in cozy 10 minutes.

Mug method:
Add 1 1/4 cups boiling water. Stir well, cover tightly and let sit for 10 minutes.

One pot method:
Bring 1 1/4 cups water to a boil, add in the dry ingredients. Stir well, turn off your stove and cover tightly. Let sit for 10 minutes.

Add salt to taste, if desired.
